A Warm & Cozy

Autumn Breakfast  

Cranberry Pumpkin Muffins (Makes 24)

2 eggs, slightly beaten
2 cups white sugar
1 cup solid pack pumpkin
1/2 cup corn oil
2 tbsp. orange zest
2 1/2 cups all-purpose flour
1 tbsp. pumpkin pie spice
1 tsp. baking soda
1/2 tsp. salt
1 1/2 cups cranberries, halved 


  1. Preheat oven to 350 degrees F (175 degrees C). Line 24 muffin cups with paper liners.
  2. Beat eggs, sugar, pumpkin, corn oil, and orange zest in a small mixing bowl until smooth.
  3. Mix flour, pumpkin pie spice, baking soda, and salt in a large mixing bowl with a fork. Make a well in the center of the flour mixture. Pour pumpkin mixture into the well; stir until the dry mixture is just moistened into a batter. Fold cranberries into the batter.
  4. Scoop batter into prepared muffin cups.
  5. Bake in the preheated oven until golden and the tops spring back when lightly pressed, 20 to 25 minutes.

 Pumpkin Spiced Latte (Makes 3 Servings)

 3 cups hot whole milk
4 tsp. white sugar
1/2 tsp. vanilla extract
1/2 tsp. pumpkin pie spice
6 oz. double-strength brewed coffee
3 tbsp. sweetened whipped cream
3 pinches pumpkin pie spice (garnish)



Combine the hot milk, sugar, vanilla extract, and pumpkin pie spice in a blender; blend until frothy. Pour the mixture into 3 coffee mugs to about 2/3 full. Pour 2 ounces coffee into each mug. Garnish each mug with whipped topping and pumpkin pie spice.

October is Breast Cancer Awareness Month.
 
Whether you are a patient, family member, friend, or just would like to support the cause, becoming informed about breast cancer is very important. Maybe you are only familiar with the name of the cause but unsure of the specifications of the illness, or what exactly you can do to help. Getting informed is the first step to joining the effort. To get a better understanding of Breast Cancer from the diagnosis to treatment to life after cancer, please visit www.BreastCancer.org.
Here in Rhode Island, we celebrate the life of Gloria Gemma, a mother, wife, daughter and friend who lost her brave fight against breast cancer. 2004 brought the creation of The Gloria Gemma Breast Cancer Resource Foundation, a program which has developed and implemented programs and services for those fighting breast cancer today. So now the question is, what can I do to get involved? All around the United States, marathons, walks, and fundraising events are held throughout the year but especially in October. You can volunteer at these events or jump right in and participate yourself! The Gloria Gemma 5K, held at the Flames of Hope Weekend, October 11-13th, is a 3.1 mile course that whips through historic Providence, Rhode Island. Breast Cancer walks and other related events are held right in your community through, for example, Making Strides on October 6th and Relay For Life, through the American Cancer Society. Whether you donate, volunteer, or participate, you are making a difference!
